Hatch Chilis

Summer is over with mid day temps in the mid 90's meaning the start of chili season here. Now that the backyard is mine again (son is almost finished painting the house he started in May), its time to fire up the dutch ovens trying out new recipes. This year will be interesting with my discovery, thanks to a friend at work, of the Hatch Chili Festival. They have a unique flavor, and like most chili peppers work in just about any recipe...well, maybe not pancakes.

This friend brought into work a huge cassorole consisting of hamburger, cream of mushroom soup, cheddar cheese, hatch chilis, and tortillas. Googling "hatch chili" is discovered a culture probably rivaling our famous Terlingua International Chili Championship.

With all the weekend rain, there's no way keeping charcoal briquets lit, so I fired up the indoor stove for a Green Chile Casserole.
